brown sugar cupcakes

After trying out two different recipes... and coming out with 3 batches that were not good enough to present to anyone- I decided to combine the two & finally...FINALLY, the brown sugar cupcake cake out perfect!!!

Here's what ya need:
Cupcake pan: this makes a little more than 24 cupcake
If you have a dark pan set your heat to 325 if it's not dark..just a regular pan then set it to 350.

3 1/4 cups of all purpose flour
2 teaspoons of baking powder
t teaspoon of salt
2 sticks of unsalted butter at room temp.
1 1/2 cups of light brown sugar
1/2 cups plus 2 tablespoons of sugar
4 large eggs at room temp.
1 1/2 teaspoons of pure vanilla
1 1/2 cups of buttermilk (well shaken)

Mix the butter and the sugar.
Scrape down the side and mix until it is combined completely.
Add the eggs one at a time. Until each is mixed in.
Beat in vanilla.

In a seperate bowl combine: flour, baking powder and salt.

Mix, begining & ending with the flour mixture- mix 1/3 of the flour mix, then 1/3 of the milk, repeat until mixed.

Bake in the oven for about 20-24 minutes. Rotate the pan at 10 minutes.

Baking, Running, & possibly a new blog!

Yesterday in the early evening I tried out a brown sugar cupcake recipe! I am not sure if they came out how they were suppose to..but I will post the recipe because they taste FABULOUS! The recipe is part of one that chockylit uses for her samoa cupcakes.
After baking those...I decided to get outside and enjoy the warm weather...and headed out for a 4.5 mile run including some killer hills! I really needed that run to get all my stress out and leave it on the pavement...
however...if you can imagine me running with a cloud bubble over my head with all the thoughts from the day in it and ideas just overflowing and bumping into each a mesh of tv shows side by side... and the channels flipping constantly..I think that is what it would look like..pretty scary! One thought was to start a new blog...hmm.. what do you think? Have you ever seen the show "the office"? Where crazy, inappropriate events occur, rules are broken and made up along the way, and the employees have no sense of team work? The show is hysterical, very very funny! But did you ever stop to think? Does that really happen?? Could people in a business setting get away with rude comments, inappropriate behavior, and blatent harrassment? Well, could it?
Well..this idea popped into my head...why not start a "fictional" blog. The blog would contain fictional stories that could possibly be based on actual events but, would still be "fictional". You know that quote that they use in the beginning of law and order? Something about a fictional interpretation of real events...
I guess it was just a thought! It could be called "the diary of a receptionist".

I can't believe APRIL is here!! How did that happen so fast?
I have a couple events coming up...first the cupcake camp in NYC! YEAH! I will be traveling to a part of the city that I have never travelled before-- to a place called "the happy ending cafe". Yes, I know. I was a bit suprised by this..and I admit..didn't understand the name at first! (I am a little oblivious at times!)But, it's a cupcake camp! And I can't wait to see all the cupcakes that everyone will bring...I can't wait to taste them either...which brings me to the next event...I probably shouldn't be tasting to many-I don't want to mess up my system...(and I have a VERY sensitive stomach! Poor me!) because... there's that little race on the 25th, too. OH MY!!! The 25th is only 3 weeks away!

SO there it is! A cupcake camp & and a half marathon..not sure if the two go together. But they will be firsts for me for both! Did that make sense?
I am getting extremely nervous about the race. Driving to central park early in the morning with my husband and run a half marathon...just makes me wonder! I hope the next few weeks prove to be good for training!

I will let you know how the cupcake camp goes soon! As for now...I am preparing to make
Chocolate Peanut butter crumble cupcakes and Samoa cupcakes (from Chockylit). I can't wait to share those recipes with you! You are going to love them! They are definetely only for a special treat/occasion....the calories are HIGH!
And the training... well, I need a long race this week of 9 or 10 miles! OH MY!! Let's hope that works.
