After trying out two different recipes... and coming out with 3 batches that were not good enough to present to anyone- I decided to combine the two & finally...FINALLY, the brown sugar cupcake cake out perfect!!!
BROWN SUGAR CUPCAKES:
Here's what ya need:
Cupcake pan: this makes a little more than 24 cupcake
If you have a dark pan set your heat to 325 if it's not dark..just a regular pan then set it to 350.
3 1/4 cups of all purpose flour
2 teaspoons of baking powder
t teaspoon of salt
2 sticks of unsalted butter at room temp.
1 1/2 cups of light brown sugar
1/2 cups plus 2 tablespoons of sugar
4 large eggs at room temp.
1 1/2 teaspoons of pure vanilla
1 1/2 cups of buttermilk (well shaken)
Mix the butter and the sugar.
Scrape down the side and mix until it is combined completely.
Add the eggs one at a time. Until each is mixed in.
Beat in vanilla.
In a seperate bowl combine: flour, baking powder and salt.
Mix, begining & ending with the flour mixture- mix 1/3 of the flour mix, then 1/3 of the milk, repeat until mixed.
Bake in the oven for about 20-24 minutes. Rotate the pan at 10 minutes.
