Birthday Cake & Cherry Filling

This cake is a rich chocolate cake with a cherry buttercream filling & a chocolate buttercream frosting. It is coated with fondant!

CHERRY BUTTERCREAM FILLING RECIPE

IF someone you know likes cherries... here's a recipe for cherry buttercream filling for a cake! It is VERY sweet...but if you have a strong chocolate cake..this will be great to break it up a bit.

Here's what ya need:
2/3 cup of high quality cherry preserves
1 stick of butter (softened)
4 cups of confectioner sugar

Mix all in your mixer & wa-la you have a filling for you cake!

Few sweet treats!

Well...my son asked me to make some sponge bob cookies for his teacher's bday..so I thought I would get a head start and try them out first! JUST IN CASE. Ya never know, I didn't want to say yes...and have a crazy looking sponge bob! These are my first tries..and now I think I know what I will do...he needs some arms too!
I am also posting a picture of some special ice cream cone cupcakes that I tried out today! I am trying to figure out the second type of cupcake I should make to bring to the cupcake camp in NYC! I have to hurry up and send my recipes in! So maybe I will have all of you help me decide... here are a few of the cones...they are REALLY tricky...the dipping of the buttercream can get messy if I don't turn the cone just right! It's a bit of extra work to get them to come out the way I want. I was also thinking about making the samoa cupcakes!! I will leave it up to you all!

Easy, no bake...Peanut Butter Granola bars

Once again I was blog searching & I accidentally stumbled upon a blog that had a recipe for 5 minute,no bake granola bars! AND she wasn't kidding... it seriously took no time at all!!
Sending a little blog love (as someone once said to me!) to Anne for the great recipe! Thank you! Here is what I did..with Anne's recipe... (I will post a picture tomorrow..this is so good I had to share it right away!!!)

Here's what ya need:

Ingredients:
Dry:
1 & 3/4 Cups rolled oats
1 Cup koala crisp rice cereal (gluten free no perservative organic cereal--chocolate flavor!)
3/4 Cup seeds- total (I used pumpkin seed and sunflower seeds)
1/4 Cup ground flax
1/4 Cup unsweetened coconut  (I only used a tiny bit....I had none left! she calls for a 1/4 cup)

Wet:
1/2 Cup honey (she used brown rice syrup..I didn't have that!)
1/3 Cup chunky peanut butter (that's what was in my fridge... almond butter would be great too)
1 tsp. vanilla extract

Instructions:

Add all the dry ingredients to a large bowl. Mix them together.

In a separate (microwave safe) bowl, mix together the wet ingredients, then microwave them for about 30 seconds. This will make it easier to mix and add to the dry ingredients. The honey and the PB get really sticky together.

Pour wet ingredients into dry and mix! Keep mixing until the wet binding ingredients are as well distributed as possible.

Then, put the mixture onto a low pan (I used a cookie sheet that had edges)and flatten it down. THAT'S IT!!!! OMG!!!!!

Let me just say the chocolate cereal, nuts, oats, and peanut butter go so great together!!
I am thinking a few mini chocolate chips would be great...but hey...I am trying to stay healthy!

white bean chili

 
I found this fabulous recipe on aggies kitchen! (thank you aggie!)WOW! It really turned out great! My husband and son LOVED it! So for all of you chili lovers, check this out!
 (I had to use what I had in my kitchen... I forgot a few things while I was out grocery shopping..but it came out great with my substitutions! That's the great thing about cooking! You can change it up..play with it & use what you have) It might look like alot of ingredients..but it really isn't! It comes together quickly. If you have leftover chicken from another meal, then you will save yourself a step!



Here's what ya need:
 1 lb tomatillos (green tomato's)
1/2 lb poblano chiles (dark green hot peppers)
2 tsp olive oil
1 1/2 cups finely chopped yellow onion
1 TB minced garlic
1 tsp Mexican oregano (use regular oregano if you don’t have Mexican--I used fresh sprigs from my garden)
3 cups chicken stock (if you want a thicker broth.. you are going to need 4)
2 cans Cannellini Beans, with liquid (whoops..I grabbed a red bean and a white bean, used one of each)
2 TB chopped fresh cilantro ( i forgot to buy the cilantro..but I used kale instead!)
2 cups cooked, shredded chicken
1/2 a pound of browned ground chicken (i added this to mine to get more meat into it)
4 cups chard, stemmed, cut 1 inch wide strips
salt and pepper, to taste

1. Preheat oven oven to 400°F. ( I put mine at 450..and checked while they cooked)

2. Place tomatillos and poblano chiles on sheet pan. (Make sure you peel the tomatillos..mine still had the leaves on them. Roast in oven until peppers have blistered and tomatillos are soft. Remove from oven. Place tomatillos in blender. Once poblanos are cool enough to handle, remove seeds and skins. Add to blender (or food processor), blend until smooth. (if you want the chili to be on the spicy side...leave some seeds...I took all of them out and it had just the right amount of kick..not too spicy)
 
3. Heat olive oil in a sauté pan. Add onions, cook until caramelized, approximately 5 minutes. Add garlic and oregano, cook until aromatic.
 
4. Add tomatillo mixture, cook for 10 minutes until slightly thickened.
 
5. Add stock, beans and their liquid. Bring to simmer, cook for 20 minutes.
 
6. Add cilantro (or kale), chicken and chard. Bring to a simmer, cook for 10 minutes. Adjust seasoning with salt and pepper.

My son and husband like to sprinkle a little cheese on top of their chili.
I also, used aggie's suggestion, and put the chili on top of cooked quinoa. Protein packed dinner!

Healthy Recipes

I've been so busy baking cakes lately! It has been fabulous! I love spending time baking and coming up with creative cakes. The best part is getting feedback! In between all that fun, I've been trying to make healthy fun meals for my family. As you know, I am training for my first half marathon. So I am trying to stick to a really clean diet. Sometimes is gets a little difficult-- sometimes I end up making different meals for myself! Here are a couple of recipes that I think everyone can really enjoy. AND if you work, the enchilladas in the slow cooker are so great! Thank you Karen for the great recipe!

Enchilladas in the slow cooker!!!!

Enchiladas (Adapted from a recipe on of my friends gave me)


 Here's what ya need:
(there are so many options with this recipe... you can change it up any way you choose... I put in some notes as to what we tried!)
1 and 1/2 pounds ground chicken or turkey
1 cup chopped red onion (i used leeks and red onion)
1/2 cup green pepper or red pepper (i used a red pepper)
1 can (16 oz) kidney beans rinsed and drained
1 can diced tomatoes (if have fresh tomoato's those are GREAT! or you can use salsa!~ We used gourmom's salsa and it was sooo good-- both ways come out great!)
1 package of enchillada dry mix (if you only have taco mix..that will work too--I think it tastes better this way!)
1 1/2 cups water
1/4 tsp pepper
1 cup shredded low fat taco cheese (we used taco cheese and swiss cheese mixed..that's what we had in our fridge!)
10 soft corn tortilla -- (or you can use healthy wraps...I gave this recipe with the corn tortilla to my sister in law who's celiac)
6-8 servings (you can adjust for more)


Brown turkey meat & saute onion and pepper in a pan. Drain. In a bowl, add all the other ingredients except for the tortillas and cheese.


In your crockpot, layer - first place a little of the turkey mixture on the bottom of your slow cooker, then a tortilla or heathy wrap, next put more meat mixture, then cheese, then a tortilla, and keep layering until you have use all ingredients...top with a little cheese. Cover & cook on low for 5-7 hours or until heated through. (make sure you have enough water liquid to last the 5-7 hours!)

Cake!!!

MY Goodness! In between work, running, and getting these kids off to where they need to be (and I love ALL of that!!! Every second of it!), I've been putting together a couple of cakes... here is one!

It is a checkerboard cake, with a chocolate ganache filling, chocolate frosting and topped with fondant and fondant decorations!

Bows and boats...

This week...I've been in the kitchen..dying fondant.... racking my brain on how to build a boat....to go on top of the cake I will be doing this weekend!! Here are a few picture's....
OH and I made some sailboat cookies too! (the boat cake is for a fundraiser for a camp my son attended this summer- which teaches children how to sail! CCB) I can't wait for both of these cakes to come together!
