Aren't they pretty??
Here's what ya need:
1 lb fresh strawberries, cut, sliced..however you want them
1/2 cup sugar
2 1/4 cup flour
2 Tablespoons of baking powder
1/2 cup of unsalted butter
2 tablespoons of sugar
2/3 cup buttermilk
1 cup of heavy cream
1/4 cup of powdered sugar
2 teaspoons of vanilla
Slice the strawberries, mix with the sugar and set aside
In a mixing bowl combine flour, baking powder 2 tablespoons of sugar, and salt.
Cut in the butter and mix by hand until the dough is crumbly. Make a well in the center of the mixture and add the egg (beaten) and buttermilk. Stir until mixture is combined. Line your cupcake pan. Fill the cupcake lines with the batter, divding batter equally.
Bake for about 15 minutes or until golden brown. Let cool.
In a cold mixer using a cold beater mix the cream, powdered sugar and vanilla together until whipped cream forms. Do not overbeat. It will curdle!
How to assemble:
Slice the cupcake in half, add a little strawberries and whipped cream, next put the cupcake top on. Now, put a dab of whipped cream on top and drizzle a little bit of strawberries and the sugary juice over the top!
